Turkey Burgers

Ingredients
- 3 tbsp olive oil (2 fl oz)
- 1/2 brown onion, finely diced (1.8 oz)
- 2 tbsp reduced fat mayonnaise (1.4 fl oz)
- 1 1/2 tbsp dijon mustard (1 fl oz)
- 3 tbsp capers, drained, chopped (0.7 oz)
- 1 tbsp fresh thyme
- sea salt, to taste
- ground black pepper, to taste
- 1 1/2 lbs turkey mince (1.5 lb)
- 2 cups shredded cabbage or coleslaw mix (6.3 oz)
- 1 1/2 tbsp apple cider vinegar (1 fl oz)
- 4 wholemeal burger buns, sliced (11.3 oz)
Method
1. Heat 1 tbsp olive oil over medium heat, then cook the diced onion for 5 minutes or until softened. Set aside.
2. Meanwhile, combine the mayonnaise with the dijon mustard and half of the minced capers. Whisk together in a small bowl, then chill until ready to serve.
3. In a large bowl, mix the turkey mince with the remaining capers and thyme. Mix in the cooked onions and season with salt and pepper to taste.
4. Use clean hands to form the mixture into 4 patties, shaping without overworking the mixture. Brush lightly with olive oil, reserving at least one tablespoon for the slaw.
5. Heat a nonstick pan over medium-high heat and once heated, add the patties and cook 5 minutes on each side, or until cooked through and browned on each side.
6. Meanwhile, toss the shredded cabbage with the remaining olive oil and the apple cider vinegar. Season with salt and pepper to taste.
7. Toast the buns to your liking. Top each of them with a turkey burger then dress with the prepared sauce and slaw. Serve any remaining slaw on the side, if desired.
