California Roll in a Bowl

Ingredients
- 2 cups sushi rice, (short grain), (400g)
- 2 1/4 cups water (1.2 lb)
- 3 tbsp kewpie (japanese-style) mayonnaise (2 fl oz)
- 1 1/2 tbsp Sriracha (hot sauce) (1.1 oz)
- 1 tsp salt-reduced soy sauce
- 2 tbsp mirin (1.4 fl oz)
- 2 tbsp white sugar (1.1 oz)
- 1/2 tsp sea salt
- 8 oz crab sticks (surimi), shredded (7.9 oz)
- 1 medium cucumber, diced (10.6 oz)
- 2 avocado, pitted and diced (10.6 oz)
- 10 nori sheets, crumbled (0.9 oz)
- 1/2 tbsp sesame seeds, toasted (optional)
Method
- To cook the rice, bring the water to a boil in a saucepan over high heat. Add the rice and stir, then reduce the heat to cover and simmer for 15 minutes. Turn the heat off and let the rice rest for 10 minutes, covered.
- Meanwhile, in a small bowl, whisk together the kewpie mayo, sriracha, and soy sauce. Set aside or chill in the refrigerator until ready to serve.
- Mix the rice vinegar, sugar, and salt together until the sugar and salt has dissolved. Pour half of the mixture over the cooked rice and fluff with a fork or paddle. After mixing well, add the remaining half of the rice vinegar mixture and repeat.
- To serve, plate the rice in bowls and top with the shredded crab sticks, grated carrots, cucumber, and avocado. Top with crumbled nori, sesame seeds and the spicy sauce.
Storage & Reheating
- To store, seal the cooked rice in an airtight container and refrigerate. Store the other components of the bowl separately and reassemble when ready to
reserve. - To reheat, microwave the rice in 45-60 second increments until reheated to your desired temperature. Assemble with the prepared components and add a drizzle of the prepared sauce with garnishes.
